A varietal honey is made from bees drawing nectar primarily from a single type of flower. There are more than 300 varietals in the U.S. alone — each with a different color, flavor and aroma!
Because honey is a natural product made by honeybees, its flavor, color, aroma and consistency can vary from batch to batch depending upon which floral sources the bees visited and in what environmental conditions.
Honey rarely goes bad, but you can ensure it stays enjoyable even longer by keeping it properly stored — at room temperature, out of direct sunlight, and with the lid tightly sealed.
Most honey will crystallize (or solidify) over time, and this natural process occurs more quickly in raw honey. While it’s perfectly good to eat in this form, you can reliquefy crystallized honey! Just fill a pot with a couple inches of water and heat on the stove until almost boiling. Place the jar of honey in the water. Keep an eye on it until the crystals dissolve, then carefully remove the jar (it will be hot).
