This Italian Zucchini Pasta Casserole will quickly become a family favorite. It’s a wonderful way to enjoy zucchini and it’s absolutely delicious. The combination of sweet Italian sausage with zucchini and Italian blend cheese is definitely a winner! I can make this casserole a meal.

I really think the addition of the tomato soup takes this casserole to the next level. It had such a sweet taste and then you add in all the spices and this is just so good. We all agreed the Italian Sausage was really good in this, I do think you could make it with ground beef or ground turkey but the sausage was really good!
You could easily use yellow squash in this dish too. Just add it in with the other vegetables.

Italian Zucchini Pasta Casserole
Delicious way to enjoy zucchini!
Servings: 6 servings
- 1 lb of Italian Sweet Sausage
- 2 cups of uncooked pasta
- 3 cups of zucchini quartered
- 1 10.75 ounce can of tomato soup
- 1/2 cup of chopped green pepper
- 1/2 cup chopped white onion
- 1 teaspoon of garlic powder
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of dried parsley
- 2 cups of Italian Blend shredded cheese divided
Preheat oven to 350 degrees. Cook pasta according to directions and set aside. Brown Italian sausage, green pepper, and onion in skillet.
Add in zucchini, spices and tomato soup. Let simmer until zucchini is soft , about 3-4 minutes.
In a 2 quart casserole dish combine pasta and meat mixture and stir in one cup of cheese. Once combined top mixture with remaining cup of cheese.
Bake in preheated oven for 20 minutes.
