It takes almost no effort to make. With pieces of graham cracker, sticky sweet marshmallow fluff, and puddles of melted milk chocolate, every bite is insanely gooey and molten-like. Man, this one really just speaks for itself. It’s everyone’s favorite crinkle stop brownie stuffed with the sweetest combination of graham crackers, marshmallow fluff, and Hershey’s milk chocolate pieces.

This one is decadent, but every warm and gooey spoonful is worth it.

I honestly have no idea what brought on the inspiration for this recipe. But for the last few weeks, I’ve really, really been wanting to create this brownie for summer nights. I just love a s’more on a warm summer night. It’s that quintessential summer dessert, but this version is even better.

Normally, I stay away from overly, overly decadent sweets. But just like my cookies n’ cream chocolate chip cookies, the over-the-top desserts do have their time and place.

Today is the day for the s’mores skillet brownie.

So what’s the secret to these s’more brownies?

Real marshmallow fluff (mine is homemade) and an XL Hershey’s bar.

Most s’more recipes use marshmallows, but I wanted my brownie to be different and so, so, so gooey. So I used marshmallow fluff, and honestly, it’s a game-changer.

Now, I will say that I did make my own marshmallow fluff using this recipe. It’s shockingly the easiest to do. But of course, you can use store-bought fluff as well. Totally up to you.

Onto the brownie batter

I use my go-to recipe that requires lots of whisked eggs for a crinkly top. Whisking the eggs prior to mixing them into the batter creates air within the eggs that helps to create that crinkly top. It might seem like an unnecessary step, and a waste of a clean bowl, but just trust me on this, it’s what makes these brownies great.

Well, that and all the semi-sweet chocolate…and butter.

Now, assemble

Gather your ingredients. You’ll need the classic S’more ingredients…graham crackers, marshmallow fluff, and Hershey’s milk chocolate bars. Simple, nothing fancy at all, but all so good. If you don’t want to use marshmallow fluff, feel free to use marshmallows instead.

Add half the crackers and chocolate to the bottom of a skillet or square baking dish. Then spread about half of the brownie batter out and dollop the fluff over the batter. Add the remaining chocolate and graham cracker pieces and cover with the remaining batter.

Simple, but it’s going to be so GREAT.

Bake

Wait patiently by the oven. I like to bake for about twenty-five minutes. But I like my brownie fudgy and molten-like in the center with pockets of melted chocolate. For a more set brownie, bake closer to twenty-eight or thirty minutes.

Now pull the skillet out and smell the deliciousness. If you’d like to get your fluff extra toasted, you can switch the oven to broil and broil for thirty seconds or use a blow torch to toast the fluff. I love a burnt s’more.

How do you serve this s’more skillet brownie?

Warm, right out of the oven, with a scoop of ice cream and a spoon…or maybe several spoons. This is a dessert that’s meant for sharing with family and friends. So it’s perfect for summer nights in the backyard.

I know it’s decadent, but it’s summer, and we all know last year’s summer was a bust. So live it up this year, it’s going to be beyond good!

  • 1. Preheat the oven to 350° F. Lightly butter a 10-12 inch oven-safe skillet or 9 inch brown pan. 2.  In the microwave, melt together the butter and chocolate chips until melted and smooth. Stir in the sugar, vanilla, and instant coffee. 3. In a small bowl whisk the eggs for 1 minute until bubbly on top. Stir the eggs into the chocolate mix. Add the flour, cocoa powder, and baking powder. Stir until just combined. 4. Arrange 1/2 of the graham crackers and 1/2 of the chocolate bar pieces in the bottom of the prepared skillet. Spread 1/2 the brownie batter over the crackers. Dollop the fluff over the batter and add the remaining Hershey’s pieces. Now add the remaining graham crackers. Top with the remaining batter, gently spreading. It’s OK if the batter doesn’t cover all of the fluff. Bake for 25-28 minutes or until the brownies are just set on top, but very jiggly in the center. Remove from the oven, let cool 3-5 minutes. If you’d like to get your fluff extra toasted, you can switch the oven to broil and broil for thirty seconds or use a blow torch to toast the fluff. I love a burnt s’more. DIG in, preferably with a scoop of ice cream!
